Many versions of ceviche exist, but my favorite is Peruvian, traditionally served with sweet potatoes and corn, which add sweetness and texture. My interpretation showcases a leche de tigre (tiger’s milk) prepared with coconut milk infused with flavors from lime and passion fruit.
