BBQ Style Pork Ribs

Ingredients

  • 1 cup Adobo of guajillo + pasilla chillies
  • 1 tbsp brown sugar
  • 2 tbsp honey
  • 2 tbsp apple vinegar
  • 1 tbsp roasted and ground pasilla pepper seeds (optional)
  • 2 tbsp ketchup
  • 2 tbsp tomato paste
  • ¼ tsp sea salt
  • 1 pinch ground black pepper
  • 1 pinch ground white pepper
  • 1 pinch ground coarse paprika
  • corn broth or the water from soaking dried chillies
  • pork baby back ribs approximately 1 kg
  • aluminium foil

Preparation

  1. Mix all the marinade ingredients together to form a semi-thick pastewith a slightly acidic and sweet flavor.
  2. Clean the pork ribs of excess fat.
  3. With a brush, spread the BBQ marinade all over the meat andmarinate for 2 hours.
  4. Wrap with a double layer of aluminum foil.
  5. Bake at 150°C (302 F) for 1.5 hours. Check for doneness and remove when soft.
  6. Spread the rest of the BBQ marinade on the ribs and cook in theoven at 150°C (302 F) for 5 minutes, uncovered, to form a golden coating.
